Protein Banana Muffin Recipe 🍌🍫😋
Ingredients: makes 12 muffins
- 2 very ripe large bananas
- 1 egg
- 4 tbsp honey
- 3 tbsp apple sauce (or oil)
- 1 tsp vanilla extract
- 3/4 cup oat flour
- 2 scoops (1/2 cup) vanilla protein powder
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- 3/4 cup semi-sweet chocolate chips
Instructions:
1. Preheat oven to 350°F (175°C).
2. In a blender, combine oat flour, protein powder, cinnamon, baking powder, and baking soda. Blend until it forms a fine powder.
3. In a mixing bowl, combine mashed bananas, egg, apple sauce, honey, and vanilla extract.
4. Mix in the dry ingredients until well combined.
5. Fold in the semi-sweet chocolate chips.
6. Scoop the batter into greased muffin cups.
7. Bake for approximately 15 minutes or until golden brown.
8. Store in fridge for a week or freezer for 3 months.
