Green Goddess Salad 🌱🥑 💚 🍋

I know in a little late to jump on this trend, but I finally tried the viral green goddess salad by @bakedbymelissa and let me tell you, it is worth all the hype. I modified the recipe slightly based on what I had at home…. which is what I’m sharing here with you today💫

Recipe

1 big head of romaine lettuce

1/2 cup finely diced cucumber

2 tbsp finely chopped chives

3 finely chopped spring onions

Dressing

1 cup baby spinach

Juice of a lemon

2 tbsp apple cider vinegar

A big handful of walnuts

2 garlic cloves

Handful of chives

Few basil leaves

1/8 cup olive oil

3 tbsp nutritional yeast

Pinch of salt and pepper

Directions: finely chop all the ingredients for the salad base and add to a bowl. In a blender, add all the dressing ingredients and blend. Pour over the salad base and mix all together. This recipe makes one very big salad or two smaller salads. Enjoy!!
