Limber de coco 🇵🇷♥️

My mom used to make these all the time for me and the ENTIRE block when I was little. My absolute favorite was coconut, and now I make them for my kids. 🥰 This recipe is easy and packed with flavor. It’s perfect for summer!

Recipe:

Ingredients ✨

- 1 can (13.5 oz) of coconut milk

- 1 can (14 oz) of sweetened condensed milk

- 1 can (12 oz) of evaporated milk

- 1/2 cup of water

- 1 teaspoon of vanilla extract

- 1/2 cup of shredded coconut (optional)

- Ground cinnamon (optional, for sprinkling on top)

Instructions ✨

1. Mix Ingredients: In a large bowl, combine the coconut milk, sweetened condensed milk, evaporated milk, water, and vanilla extract. Mix well until all ingredients are fully incorporated.

2. Add Shredded Coconut: If you like a bit of texture, stir in the shredded coconut.

3. Pour into Molds: Pour the mixture into small cups, ice pop molds, or any container you prefer. Traditional limbers are often made in small plastic cups.

4. Freeze: Place the cups in the freezer. Freeze for at least 4-6 hours or until fully frozen.

5. Serve: When ready to serve, you can sprinkle a little ground cinnamon on top for added flavor.
