For me, weeknight dinners are all about efficiency without sacrificing flavour or nutrition. After a long day, the last thing I want is a complicated recipe. My go-to strategies include meal prepping on Sundays – chopping veggies, pre-cooking grains, or even making a big batch of sauce. This way, a delicious and healthy meal like a stir-fry, a quick pasta dish, or sheet pan chicken and veggies can come together in under 30 minutes. I also love using versatile ingredients that can be transformed into different meals throughout the week, reducing waste and saving time. Weekend dinners are a different story. This is when I allow myself to experiment a bit more, try out that new recipe I’ve bookmarked, or indulge in some comforting classics. Think slow-cooked stews, homemade pizzas, or a perfectly roasted chicken. It’s also my favourite time to gather with loved ones, so I often enjoy cooking something that can be shared, making the meal not just about the food, but about the company and conversation. Sometimes, just putting on some music, lighting a candle, and setting the table nicely can transform a simple meal into a special occasion, even if it's just for one. Beyond the food itself, the atmosphere of dinner plays a huge role. I find that taking a few extra minutes to plate my food beautifully, even if it’s just a simple salad, makes the experience so much more enjoyable. And honestly, unplugging from screens during dinner has been a game-changer. It allows me to truly savour each bite and be present, whether I’m eating alone or with family. It's a small ritual that helps me de-stress and reflect on the day. Budget-friendly dinners are also something I’m passionate about. Eating well doesn't have to break the bank! I often plan my meals around sales at the grocery store, use cheaper cuts of meat that are great for slow cooking, and get creative with leftovers. Turning yesterday's roast into today's sandwiches or a hearty soup is both economical and delicious. It’s all about smart planning and a little bit of imagination.
