I went to Iekei ramen shop "Ramen Shinzan" newly handled by the founder of the king of Tsukemen "Nozome."
Although it just opened on February 5, 2026, it is a hot topic store with a constant line.

This time I got "Special Rich Ramen" of the signboard menu.

私が行った日は、開店間もないのにすでに行列ができていて「これは期待値高いな…」とドキドキ。上尾の「ラーメン新山」は、狼煙創業者が新しく手がける家系ラーメンということで、家系好き・狼煙ファンのどちらの検索意図にも刺さるお店だと思いました。 ■ らーめん新山のメニュー（私が見た範囲の印象） 基本は“濃厚系の家系”が主役で、看板は特製濃厚ラーメン。特製はチャーシュー・味玉・海苔・青菜（ほうれん草系）がしっかり乗るタイプで、最初から満足感高めでした。初訪問なら、まずは「特製濃厚ラーメン」を選ぶと店の強みが一気に分かりやすいです。 ■ スープ：呼び戻しの濃厚さ＋後味のキレ 呼び戻しスープって“重たいだけ”になりがち…と思っていたのですが、新山は旨味の厚みがありつつ塩味が尖らず、意外とレンゲが止まらない感じ。泡立ちと鶏油のコクもあって、家系らしいパワーはありつつ、最後まで飲める設計に感じました。 ■ 麺：自家製の「逆切り麺」が主役級 太めでもっちり、ちょい縮れっぽくスープの持ち上げが強いです。とくに海苔で麺を巻くと、香りと濃厚スープの一体感がすごくて“この食べ方が正解”になりました。 ■ 具材：炭火吊るし焼きチャーシューと味玉が当たり 豚もも肉チャーシューが香ばしくて、脂が重すぎないのにしっとり。味玉は黄身がとろっとしてスープと相性抜群でした。青菜と海苔が多めなのも家系好きには嬉しいポイント。 ■ 味変のおすすめ（個人的ベスト） 後半にニンニク＋豆板醤で一気にパンチを足すと、濃厚さがさらに気持ちよく加速します。ここで“ライス頼んでおけば…”となりやすいので、迷うなら最初から頼むのが安全です。 ■ 混雑と狙い目 私の体感だと平日14時前は比較的スムーズ。行列前提の日は、回転を考えて「特製＋ライス」みたいに迷いを減らすと満足度が上がります。 上尾で「ラーメン新山」「らーめん新山 メニュー」「狼煙 家系ラーメン」で探している人にはかなり有力候補。狼煙のDNAを感じつつも、新山としての“濃厚家系の完成形”を出してきた一杯でした。
