I went to Iekei ramen shop "Ramen Shinzan" newly handled by the founder of the king of Tsukemen "Nozome."
Although it just opened on February 5, 2026, it is a hot topic store with a constant line.

This time I got "Special Rich Ramen" of the signboard menu.
That commitment is terrible...

ラーメン新山は、家系ラーメンの伝統を受け継ぎつつも、新しい工夫を凝らした一杯を提供しているのが特徴です。呼び戻しスープという技法は、過去のスープを継ぎ足して旨味を増す方法で、濃厚ながらもしつこくなくバランスが絶妙です。私も実際に訪れた際、ドロリとしたスープの中に深いコクとまろやかな塩味が感じられ、最後の一滴まで飲み干すほど感動しました。 麺は自家製の逆切り中太麺が使われており、一般的なストレート麺とは違った独特の食感が楽しめます。ふっくらとした仕上がりで、スープとの絡みが最高でした。チャーシューは炭火で吊るし焼きにされた豚もも肉で、香ばしさと柔らかさの両方を兼ね備えています。これに兵庫県産の高級海苔をスープに浸して麺を巻けば、まさに多幸感。特にご飯と一緒に食べるのがおすすめで、食事としての満足感もアップします。 また、後半になると、ニンニクと豆板醤を加えることで味にパンチが効き、飽きることなく最後まで味変を楽しめるのも魅力のひとつです。お店の内装も広々として清潔感があり、居心地が良いのでゆっくり味わうことができました。 私の経験では、平日の14時前は比較的空いていてスムーズに入店できるため、行列を避けたい方はこの時間帯を狙うのが良いでしょう。家系ラーメンのコアなファンはもちろん、初めて家系を体験する人にもおすすめできる味と雰囲気です。ラーメン新山は間違いなく埼玉の新たなラーメン名所として注目されています。ぜひ足を運んで、その至高の味を体感してみてください。
