I went to Iekei ramen shop "Ramen Shinzan" newly handled by the founder of the king of Tsukemen "Nozome."
Although it just opened on February 5, 2026, it is a hot topic store with a constant line.
When you go through the red curtain, a spacious and clean space spreads out.
This time I got "Special Rich Ramen" of the signboard menu.
That commitment is terrible...
🍜 soup: "call back" technique to add umami. Although it is thick and thick, the salty taste is exquisite and not heavy!
🥢 noodles: Homemade "reverse cut" medium-thick noodles. It has a plump texture and excellent soup entanglement.

ラーメン新山の魅力は何と言っても、その独自の「呼び戻しスープ」にあります。私も先日訪問し、その濃厚でありながら塩味が際立つスープの奥深さに驚きました。普通の家系ラーメンとは一線を画す味わいで、毎回変わらぬ旨みが続くのは、まさに職人の技が光っています。 また、自家製の逆切り中太麺は噛み応えがありつつ柔らかさも感じられ、スープとの絡みが素晴らしいです。初めて体験する食感で、麺を口に運ぶ手が止まらなくなりました。写真で見る通り、チャーシューは炭火吊るし焼きで、外は香ばしく中はしっとり。脂身も程よく、これがスープに溶け込むと絶品です。 訪れた時間帯にもよりますが、平日午後2時前なら比較的スムーズに入店できます。店内は広く清潔感があり、カウンター席中心で一人でも入りやすいのがポイントです。 他にも味玉や兵庫県産の高級海苔など、細部へのこだわりが伝わるトッピングが豊富で、ご飯との相性も抜群。個人的にニンニクや豆板醤を少し足して味変するのがおすすめで、最後まで飽きずに完食できました。 今後さらに注目されること間違いなしの「ラーメン新山」。家系ラーメン好きはもちろん、初めて家系に挑戦する方にもぜひ体験してほしい一杯です。上尾の新グルメスポットとして、再訪を楽しみにしています。
