✨Kimchi Fried Rice✨
Ingredients (serves 2 pax)
• Rice: Cooked white rice — Recommended to be chill in fridge overnight (chilled rice is firmer and fries better)
• Kimchi: 1 cup of aged kimchi (chopped into bite-sized pieces)
• Kimchi Juice: 2–3 tbsp (this is where the deep flavor lives)
• Protein: 1/2 cup of diced sausage/bite-sized chicken
• Aromatics: 1/2 small onion (diced) and 1 clove of garlic (minced)
• Seasoning: 1 tbsp Gochujang (Korean chili paste) and 1 tsp sesame oil
• Garnish(optional): A fried egg (sunny side up), toasted seaweed strips (nori), and green onions.
Instructions
1. Sauté the Aromatics and Protein:
Heat a tablespoon of oil in a large skillet or wok over medium-high heat. Add your protein and cook until slightly browned. Stir in the onion and garlic, sautéing until fragrant.
2. Caramelize the Kimchi:
Add the chopped kimchi to the pan. Stir-fry for 2–3 minutes. High heat helps the kimchi soften and develop a slightly sweet, caramelized edge.
3. Mix in the Flavors:
Lower the heat slightly and stir in the Gochujang. Mix well so the base is consistent.
4. Add the Rice:
Add the cold rice to the pan and cook. Remember to break up any clumps. Pour the kimchi juice over the rice and stir-fry everything together until every grain of rice is coated in that signature red hue.
5. The Final Touch:
Turn off the heat and drizzle with sesame oil. Toss one last time to incorporate the aroma.
6. Serving(optional):
Top each bowl with a fried egg—the runny yolk acts as a rich sauce for the spicy rice. Sprinkle with seaweed and green onions.
