✨Kimchi Fried Rice✨

Ingredients (serves 2 pax)

• Rice: Cooked white rice — Recommended to be chill in fridge overnight (chilled rice is firmer and fries better)

• Kimchi: 1 cup of aged kimchi (chopped into bite-sized pieces)

• Kimchi Juice: 2–3 tbsp (this is where the deep flavor lives)

• Protein: 1/2 cup of diced sausage/bite-sized chicken

• Aromatics: 1/2 small onion (diced) and 1 clove of garlic (minced)

• Seasoning: 1 tbsp Gochujang (Korean chili paste) and 1 tsp sesame oil

• Garnish(optional): A fried egg (sunny side up), toasted seaweed strips (nori), and green onions.

Instructions

1. Sauté the Aromatics and Protein:

Heat a tablespoon of oil in a large skillet or wok over medium-high heat. Add your protein and cook until slightly browned. Stir in the onion and garlic, sautéing until fragrant.

2. Caramelize the Kimchi:

Add the chopped kimchi to the pan. Stir-fry for 2–3 minutes. High heat helps the kimchi soften and develop a slightly sweet, caramelized edge.

3. Mix in the Flavors:

Lower the heat slightly and stir in the Gochujang. Mix well so the base is consistent.

4. Add the Rice:

Add the cold rice to the pan and cook. Remember to break up any clumps. Pour the kimchi juice over the rice and stir-fry everything together until every grain of rice is coated in that signature red hue.

5. The Final Touch:

Turn off the heat and drizzle with sesame oil. Toss one last time to incorporate the aroma.

6. Serving(optional):

Top each bowl with a fried egg—the runny yolk acts as a rich sauce for the spicy rice. Sprinkle with seaweed and green onions.

... Read moreKimchi fried rice is one of my go-to dishes when I want something quick, flavorful, and satisfying. From personal experience, using overnight chilled rice is a game changer—it keeps the grains firm and prevents them from turning mushy during stir-frying. I also find that caramelizing the kimchi a bit brings out its natural sweetness, balancing the spicy and tangy flavors beautifully. I usually like to customize the protein based on what I have at home. While sausage adds a smoky, savory touch, chicken works great for a leaner option. Also, don't skip the kimchi juice; it's packed with deep umami flavor that really elevates the whole dish. Drizzling sesame oil at the end adds a nutty aroma that complements the spiciness of gochujang perfectly. For garnish, I highly recommend topping your kimchi fried rice with a sunny-side-up egg—the runny yolk creates a rich sauce that ties all the flavors together. The crunchy seaweed strips and fresh green onions provide texture contrast and freshness. This dish is incredibly versatile and perfect for using leftover rice and ingredients, making it both an effortless and gourmet meal at home. I love experimenting with adding other veggies like carrots or mushrooms for extra nutrition and texture, and sometimes sprinkle toasted sesame seeds on top for added crunch. Overall, kimchi fried rice is a simple yet deeply satisfying recipe that captures the essence of Korean comfort food, and it’s definitely worth making a regular part of your cooking repertoire.
