If you know me, you know my lamb chop recipes are top-notch. Grilled for the first time, they're still full of flavor, super tender, and melt in your mouth. Can't share all my secrets, but here's a great marinade:

• Extra virgin olive oil or avocado oil

• Your fav Green Seasoning

• Chili Powder

• Onion Powder

• Garlic Powder

Just pop them in a sealed bag or container, and your future self will thank you for the extra juicy results. Now for the grilling itself! This is crucial for achieving those melt-in-your-mouth results. I always preheat my grill to a medium-high heat. For standard lamb chops (about 1-inch thick), I aim for about 3-4 minutes per side for a perfect medium-rare, which is how I personally love them – still pink and incredibly juicy in the middle. Remember, you can always adjust for your preferred doneness, but a good rule of thumb for internal temperatures is: 145°F (63°C) for medium-rare, 160°F (71°C) for medium, and 170°F (77°C) for well-done. Always use a reliable meat thermometer to be sure! Don't forget to let them rest for at least 5-10 minutes after grilling; this step is key to locking in all those delicious juices. Not a grill person? No worries at all! You can also achieve fantastic results by searing them on a cast-iron skillet for 2-3 minutes per side, then finishing them in a preheated oven at 375°F (190°C) for another 5-7 minutes, depending on thickness and desired doneness. The key is that initial sear for a beautiful, flavorful crust. What's a delicious lamb chop without the perfect companion? For sides, I often keep it simple but incredibly flavorful.
