Stuffed bell peppers are a nutritious and versatile dish that can be tailored to suit your tastes. You can substitute ground turkey with other proteins like chicken, beef, or even plant-based options like lentils or quinoa for a vegetarian twist. To add more flavor, consider incorporating spices like cumin or chili powder to your filling mix. If you're looking for a low-carb version, you could skip the rice or use cauliflower rice instead. Stuffed peppers also freeze well, making them an excellent option for meal prep. Just assemble them without baking, freeze, and when you're ready to eat, bake straight from the freezer with a bit more cooking time. This dish not only offers a burst of flavor, but bell peppers are also rich in vitamins A and C, and they add a pop of color to your plate. Whether served alone or with a side salad, these stuffed bell peppers are sure to be a family favorite!
