What’s for lunch? 🥰

These arent anything like Honduran baleadas, but they’re a tiny bit similar in the way the beans are refried and put inside of the tortilla. Today I ran out of them and didnt have any time to make any by hand, so I used corn tortillas. I also have a lot of ingredients from the mexican food I cook so I added some of those as well, I cant exactly put a name to what I made but it’s too good.

Inside the tortilla is

- refried beans

- eggs

- avocado

- queso chihuahua

and on top I added a drizzle of crema mexicana, queso fresco and some sliced pickled jalapenos for spice 💋 10/10 invention
