Sometimes the best meals are the ones you didn’t plan…like this one ☝️
This was an impromptu wrap I made on a day I wasn’t planning on making a wrap…
but I opened my fridge and instinctively pulled everything for one together.
So… here we are.
Call me the “wrap girl” 🤎
Simple, a little messy, and somehow always exactly what I need.
I just layered some of my favorite ingredients:
• Lavash
• Whipped Feta + pesto
• Slow roasted tomatoes
• Avocado
• Spinach
That’s it.
Quick, filling, made with real ingredients—
and somehow tastes like something you’d order out.
Not always aesthetic.
Sometimes messy.
But always worth it.
Save this for your next easy lunch 🥙

I love how wraps are so versatile and quick to make, especially on days when you don’t plan your meals ahead. Using lavash as the wrap base adds a soft yet sturdy texture that holds all the ingredients without falling apart. One of my favorite parts of this impromptu wrap is the whipped feta paired with basil pesto. The creamy and savory layers complement the slight sweetness and rich flavor of slow roasted tomatoes perfectly. Adding avocado not only gives a buttery smooth taste but also packs in healthy fats, making the wrap even more satisfying. Including fresh spinach brings a refreshing crunch and a nutritional boost with iron and vitamins. Sometimes I also like to add a light protein such as a soft boiled or scrambled egg, which blends nicely with the other flavors. I’ve found that these kinds of wraps are perfect for a quick lunch or even a light dinner. You can experiment with whatever you have on hand – kale or other greens can be swapped in, and different types of cheeses or spreads can enhance the flavor profile. Messy or not, these wraps always feel comforting and restaurant-quality, even if they’re whipped up in just 10-15 minutes. Plus, it’s a great way to reduce food waste by using leftover veggies and spreads in your fridge. If you want to elevate your wrap game, try slow roasting your own tomatoes with olive oil, garlic, and herbs. It intensifies the flavor and adds a nice touch of decadence. Trader Joe’s has amazing pre-roasted tomatoes and pestos if you want a shortcut. Give this recipe a try for your next easy meal and don’t be afraid to get creative!
