... Read moreOkay, so you've made that incredible 3-ingredient avocado bread (the one from above – you know, the one that only needs egg, avocado, and Parmesan? So easy!). Now, let's talk about taking your sandwich game to the next level, especially if you're like me and always looking for healthy, tasty options. I've been obsessed with bell pepper sandwiches lately, and this avocado bread is seriously the ultimate base. When I first heard about bell pepper sandwiches, I was intrigued. I love bell peppers, but usually, they're just a crunchy addition. But using them as a main component, especially with this amazing Avocado Bread? Game-changer! You get that satisfying crunch, a burst of fresh flavor, and all the nutrients without the heaviness of traditional bread. It's such a smart way to get more veggies into your day. Here are some of my favorite ways to build a bell pepper sandwich using our fantastic Avocado Bread INGREDIENTS ONLY! recipe: First up: The Classic & Cheesy. This is my go-to when I need something quick and comforting. I take two slices of the avocado bread, spread a thin layer of cream cheese or even a good quality hummus on one side. Then, I layer thinly sliced bell peppers – I usually go for red and yellow because they're sweeter – along with some fresh spinach or arugula. A sprinkle of Everything Bagel Seasoning (because, why not?) and maybe a slice of cheddar (if I'm feeling extra) and you're good to go. It's simple, but the textures and flavors really pop. Next, for something a bit more substantial: The Protein Power-Up. If you're looking for something that will keep you full longer, this is it. On your avocado bread, spread some mashed avocado (if you didn't already use it as a base, or just a little extra!), then layer grilled chicken breast (leftovers are perfect!), more thinly sliced bell peppers (green adds a nice peppery kick here!), and maybe some feta cheese. A drizzle of balsamic glaze takes it up a notch. It’s like a mini salad in a sandwich form, and the avocado bread holds it all together beautifully. And for a totally vegetarian option that’s packed with flavor, try this: A Mediterranean-inspired bell pepper sandwich. Start with a base of your homemade avocado bread. Spread some olive tapenade or roasted red pepper spread. Layer with colorful bell peppers, cucumber slices, Kalamata olives, and a sprinkle of dried oregano. If you want a little tang, add some pickled onions. This combination is so fresh and vibrant, and it feels like a gourmet lunch, even though it took minutes to assemble. The richness of the avocado bread complements the tangy and salty flavors perfectly. What I love most about using this avocado bread for my bell pepper sandwiches is how customizable it is. You can literally throw whatever fresh veggies you have on hand between two slices, and it just works. Bell peppers come in so many colors, and each has a slightly different flavor profile – red are sweet, yellow are mild, orange are juicy, and green are slightly bitter and peppery. Playing around with these variations can make every sandwich feel new and exciting. Don't forget about the health benefits too! Bell peppers are loaded with Vitamin C, antioxidants, and fiber, while avocado brings healthy fats and even more nutrients. Combining them with our Avocado Bread INGREDIENTS ONLY! recipe means you're getting a nutrient-dense meal that's delicious and satisfying. It’s perfect for a quick breakfast, a light lunch, or even a healthy snack. Seriously, save this idea and try it out. Your taste buds (and your body!) will thank you!
