Easy Cottage Cheese Pasta Recipe

If you like the viral feta pasta recipe, I think you’ll like this one!

Ingredients:

• Pasta (I used rotini)

• Cherry tomatoes

• Olive oil

• Cottage Cheese

• Parmesan / mozzarella (I used a shredded mix)

• Spices

• Chicken sausage (optional)

Directions:

1. Preheat oven to 425°F

2. In an oven safe dish, place cherry tomatoes, a small amount of olive oil, a generous amount of cottage cheese and Parmesan/mozzarella. Add spices like red pepper, black pepper, salt, garlic, onion, basil, etc.

3. Cook the oven safe dish for 20-25 minutes or until the tomatoes are soft enough to smash

4. Cook pasta according to directions

5. Optionally, cook sausage on a skillet until golden brown

6. Carefully, mash the tomatoes and mix the sauce well

7. Combine the pasta, sausage, and pasta. Mix well. Serve and enjoy!

Additional tips: if you hate the texture of cottage cheese and want a smooth sauce, blend the cottage cheese prior to use.
