Healthy Sheet Pan Breakfast Burrito Meal Prep

I meal prepped breakfast burritos!

Ingredients used:

• eggs

• 1/2 cup cheddar cheese

• mushrooms

• 1/2 cup cottage cheese

• seasonings

• spinach

• tortillas

1. Blend cheeses, spices, and eggs together

2. Pour onto prepped sheet pan

3. Add spinach and mushrooms. Cover with additional cheddar and spices

4. Bake at 350° for 10-18 minutes (or until fully cooked).

5. Cut eggs into even slices. I did 8 slices, but you can make more or less.

6. Place egg slice into burrito and wrap. Cover in tin foil and freeze.

7. When ready to eat, microwave with the aluminum off or air fry with it on.

First, let's really appreciate the magic of the sheet pan. I used to spend ages cooking eggs in batches for burritos, but honestly, the sheet pan method is a total game-changer. It makes whipping up a big batch of eggs for burritos so simple and drastically cuts down on cleanup. Just pour your blended egg mixture, add your favorite toppings, and let the oven do the hard work. It's truly a secret weapon for anyone serious about breakfast meal prepping. Now, about that hidden protein boost: Adding cottage cheese (yes, *cottage cheese*!) to your egg mixture, as I did, is a secret weapon for a protein punch without changing the flavor much. When you 'Blend until smooth' eggs, shredded cheese, and cottage cheese, it just disappears into a creamy, fluffy egg base. This makes each burrito super satisfying and keeps you full until lunch. Don't worry, even if you’re not a fan of cottage cheese on its own, you won't taste it here – just pure, fluffy, high-protein goodness. You can also 'Add your favorite seasonings' to this blend to really elevate the flavor profile. One of the most common questions I get about meal prep burritos is how to keep them fresh and avoid freezer burn. The key is all in the wrap! After you 'Cut and add to tortillas' your delicious egg mixture and 'Add additional toppings', a good tight wrap in foil is essential. I usually place the filling slightly off-center on the tortilla, fold in the sides first (about an inch or two), then roll tightly from the bottom up. Make sure the foil is snug all around, covering the entire burrito without any gaps.
