I remember the first time I tasted Jamaican KFC BBQ Chicken – it was an absolute game-changer! The sweet, savory, and slightly spicy notes, combined with that perfectly crisp yet tender texture, left me craving more. It's not just regular BBQ chicken; it's an experience, often lovingly called 'Barbi-Fried Chicken' for its unique preparation and flavor profile. If you're searching for an authentic 'Jamaican KFC' taste, you've hit the jackpot with this recipe. One of the true secrets to achieving that deep, tantalizing flavor in your homemade Jamaican KFC BBQ Chicken lies in the marination. Don't skip the buttermilk! It works magic, tenderizing the chicken and helping the seasonings penetrate deeply. For the 'powder seasoning' mentioned, I usually go for a vibrant blend including garlic powder, onion powder, smoked paprika, a pinch of allspice, and a dash of cayenne pepper for that signature Caribbean warmth. And 'green seasoning'? That's a fresh herb powerhouse, typically a blend of scallions, fresh thyme, Scotch bonnet pepper (use with caution!), garlic, ginger, and pimento berries. Marinating your chicken overnight, or at least for 2-4 hours, with this potent combination is essential for an unforgettable flavor. Now, let's talk about getting that perfect 'Barbi-Fried Chicken' texture. Whether you're air-frying or deep-frying, temperature control is crucial. If air-frying, ensure your chicken pieces are in a single layer and not overcrowded – this allows for maximum airflow and crispiness. For stove-top frying, getting the oil to 360°F is key for a beautiful golden-brown crust. After the initial fry, dipping the chicken into that luscious BBQ sauce and then air-frying it again for 5 minutes is a game-changer. I've found that an internal temperature of 165°F ensures perfectly cooked, juicy chicken every time. And while the original recipe uses 330F, some like to finish their "Barbi-Fried Chicken" at a slightly lower temperature, like 325F, after saucing, for a more gentle caramelization without burning. The homemade BBQ sauce itself is a star. While the recipe suggests stevia, feel free to experiment with a tablespoon or two of brown sugar for a richer, more caramelized glaze. A little extra lemon juice can brighten the flavors, too! This versatile Jamaican KFC BBQ Chicken is fantastic served with traditional sides like rice and peas, steamed callaloo, or a crisp coleslaw. It’s a dish that consistently gets rave reviews and brings a little piece of the Caribbean right into your home kitchen. Trust me, once you try this 'Barbi-Fried' goodness, it’ll become a staple!
