• ½ tsp ground allspice (or 4 pimento berries)
• 3–4 cloves garlic, minced
• 1 medium onion, sliced
• 1 bell pepper, sliced
• 2 stalks scallion, chopped
• 1–2 sprigs fresh thyme (or 1 tsp dried thyme)
• 1 scotch bonnet pepper (whole, pierced once for flavor, or minced for heat—optional)
• 2 tbsp tomato ketchup (or 1 tbsp tomato paste + 1 tsp sugar)
• 1 cup chicken stock (or water)
• 1 tbsp oil (for sauce)
• Cooking spray (for air fryer basket)
Instructions
1. Clean and season chicken
1. Wash chicken with lime juice or vinegar, rinse, and pat dry.
