✨ Healthy Eggplant Chicken Parm ✨

My husband, who is dieting, absolutely loves this meal! It was his first eggplant meal he ever tried and he fell in love with it!

Ingredients:

• 6 oz sliced eggplant

• 6 oz tomato sauce

• 10 oz thinly sliced chicken

• 1/3 cup shredded mozzarella cheese

• salt

• pepper

• onion powder

• garlic powder

Directions:

- Add sliced eggplant to a baking sheet lined with parchment paper. Spray the slices with a cooking spray. Season the slices with salt and pepper.

- Add a layer of tomato sauce on top of the eggplant putting a little sauce on each slice and using circular motion to cover the slices.

- Placed the thinly sliced chicken on top of the tomato sauce and season generously with salt, pepper, onion powder, and garlic powder. (Season to your liking). Top with the shredded cheese.

- Bake at 350 degrees for 20-25 mins or until the eggplant is soft and the chicken is fully cooked.
