Growing up food in my house was used as medicine as well! The nutrition in Whole Foods are things that can cure even what medicine can’t!
INGREDIENTS:
• 2 tbsp butter or olive oil
• 1 small onion, diced
• 2 medium carrots, sliced thin
• 2 celery stalks, sliced
• 3 cloves garlic, minced
• 8 cups chicken broth (low sodium preferred)
• 2 cups cooked shredded chicken (rotisserie works great)
• 1 ½ cups fine egg noodles
• 1 tsp dried thyme
• 1 tsp dried parsley
• ½ tsp black pepper
• Salt to taste
• 1 tbsp fresh lemon juice (optional but brightens flavor)
DIRECTIONS:
1. In a large pot or Dutch oven, heat butter or oil over medium heat.
2. Add onion, carrots, and celery. Sauté for 5–7 minutes until vegetables begin to soften.
3. Add garlic and cook for 30 seconds until fragrant.
4. Pour in chicken broth. Stir in thyme, parsley, and black pepper. Bring to a gentle boil.
5. Reduce heat and simmer for 10–15 minutes to allow flavors to develop.
6. Add shredded chicken and fine egg noodles. Cook according to noodle package directions (usually 5–7 minutes). Stir occasionally so noodles don’t stick.
7. Taste and adjust salt as needed.
8. Stir in lemon juice if using.
