Ingredients

Base:

- 1 cup diced carrots

- ½ cup diced onion

- 2 cloves garlic, minced

- 1 tsp grated ginger

- 1 cup red lentils (rinsed)

- 1 tsp turmeric

- ½ tsp cumin

- ½ tsp paprika

- Salt & pepper to taste

Liquid:

- 4 cups vegetable broth

- ½ cup coconut milk (optional for creaminess)

Finish:

- 1 cup chopped spinach or kale

- Lemon wedge for serving

- Fresh cilantro for garnish

Directions

1. Sauté aromatics:

Heat olive oil. Add carrots, onions, garlic, and ginger. Cook until softened.

2. Spice it:

Stir in turmeric, cumin, paprika, salt, and pepper.

3. Build the stew:

Add red lentils, broth, and coconut milk. Stir well.

4. Simmer:
