Lazy Girl Sushi Bowl

Lazy girl sushi bowl coming in hot (or I mean…cold 🤭) because sometimes you want all the sushi vibes without rolling a single thing. Rice, veggies, spicy mayo, and whatever toppings you’ve got on hand. It’s fast, it’s satisfying, and yes, it totally counts as self-care.

What you need

• Sushi or sticky rice

• Tuna packet (I like the Thai chili one)

• Seaweed snacks (i like the wasabi and teriyaki)

• Rice vinegar

• 1 tsp sugar (not pictured)

• Cucumber and/or avocado

What you do:

1.) Make your rice and add the sugar and rice vinegar. You don’t need a lot, just eye ball it. Put it in a bowl.

2.) Chop your cucumber and mix in a little more vinegar. Add avocado if using. I recommend it, I just didn’t have any at my house today. Add this mixture to the rice bowl.

3.) Open that tuna packet and put it in the bowl of rice.

4.) Garnish with spicy mayo, soy sauce, Gochujang sauce, green onions, or whatever your heart desires. Eat with the seaweed wrappers!
