Otto cuisine _ Rich creamy soy milk gratin with plenty of Chinese cabbage

It's my first time making it, so I'm worried, so it seems that they add a little milk as well as soy milk, and they also use butter and olive oil, so diet? It may feel like that, but there is no macaroni and the ingredients are only Chinese cabbage!
However, it was rich and creamy, and the Chinese cabbage was crispy and crunchy, and it was well entwined with the sauce, so it was delicious! I had it with whole wheat bread.

「豆乳グラタン」って、あっさりしすぎるのかな？と最初は不安だったんですが、白菜をたっぷり入れるとソースに自然な甘みととろみが出て、想像以上に“超濃厚クリーミー”になります。うちは今回はマカロニなしで作ったので、食べ応えはあるのに罪悪感が少なめで、ダイエット中っぽい気分も保てました。 豆乳グラタンを失敗しにくくするポイントは「加熱しすぎないこと」と「とろみの付け方」です。豆乳はグツグツ煮立てると分離しやすいので、火加減は弱め〜中弱火で、混ぜながら温めるのがおすすめ。とろみは小麦粉（薄力粉）でホワイトソース風にしてもいいし、もっと手軽にしたいなら米粉でもまとまりやすかったです。バターの代わりにオリーブオイルを使うと軽さが出るので、こってりが苦手な人にも合います。 具材は白菜だけでも十分おいしいですが、食感を残したいときは「芯は先に炒める／葉は後から加える」とメリハリをつけると、クタッとした部分とシャキッとした部分が両方楽しめます。白菜から水分が出るので、炒めて軽く水分を飛ばしておくと仕上がりが水っぽくなりにくいです。 味付けはシンプルに塩こしょう＋コンソメでもまとまりますが、個人的に“濃厚感”が欲しい日は味噌をほんの少し入れるとコクが増えて好きです。チーズは少量でも焼き色が付くと満足度が上がるので、上だけにのせる作戦もアリ。仕上げに黒こしょうを多めに振ると、豆乳のやさしい味が引き締まります。 食べ方は全粒粉パンと合わせると腹持ちも良くて、熱々の豆乳グラタンにパンを浸して食べるのが最高でした。翌日に食べるなら、少しだけ豆乳（または牛乳）を足して温め直すと、なめらかさが戻りやすいです。白菜たっぷりの熱々豆乳グラタン、気分的にも満足できるのでぜひ試してみてください。
