This Bell Pepper Chicken Pepper Soup is loaded with chicken, gizzard, yam, plantain and fresh peppers. It’s the kind of meal that perfumes the whole house and hugs you from the inside. Save this if you love simple, homely Nigerian recipes. 💛

📝 Ingredients

• Chicken pieces

• Gizzard (cleaned and parboiled)

• Bell peppers

• Scotch bonnet peppers

• 3 tomatoes

• Onions

• Spring onions

• Fresh parsley

• Yam (peeled & cubed)

• Unripe plantain (sliced)

• Pepper soup spice

• Seasoning cubes/powder

• Salt to taste

• Optional: garlic & ginger for extra flavor

🍲 Step-by-Step Recipe

Step 1 – Make the pepper mix

Blend bell peppers, scotch bonnet, tomatoes and a little onion into a smooth paste. Set aside.

Step 2 – Season the chicken

Add chicken to a pot with chopped onions, seasoning cubes, pepper soup spice and salt. Add a little water and let it steam until it releases its own juice.

Step 3 – Add the gizzard

Pour in the parboiled gizzard and cook together so the flavors marry.

Step 4 – Add blended pepper

Add the blended pepper mix into the pot, stir and let it cook until the raw pepper taste reduces and the aroma comes out.

Step 5 – Cook yam & plantain

Add yam cubes and sliced plantain into the pot. Top up with water if needed. Cover and cook until both are soft and the broth is rich.

Step 6 – Finish with fresh herbs

Add chopped spring onions and parsley. Taste and adjust salt, seasoning and pepper soup spice.

Step 7 – Serve

Let it simmer on low for a few more minutes, then serve hot. Perfect for cold days or when you just need comfort in a bowl. 🔥
