A perfect 15 minute fall dinner 🍂🍷
I’ve been cooking up so many fall inspired recipes in my Instant Pot. I wish my sauce came out a bit darker but it was still good. I think this recipe is perfect for a Sunday night during the fall time. Full of flavorful herbs and filling, it’s perfect for a date night at home too.
Ingredients
Herbed lamb recipe
1 lb Frenched lambrack (Costco brand)
Herbes de Provence Trader Joe’s) - enought to coat entire rack, go heavy
2 tsp onion powder (coat all over rack)
6 fresh minced garlic cloves about a tsp worth for lamb and rest to cook
Celtic sea salt and cracked pepper
Many drizzles of extra virgin olive oil
3 sprigs of fresh thyme
3 cups of low sodium chicken broth
Optional: garnish with microgreens
•Drizzle a lot EVOO then press the sauté function on the Instant Pot for 15 minutes. Wait for EVOO to be transparent. Add garlic to cook but don’t let it burn. Then add the herbed lambrack to brown on each side.
•Once all sides browned, add 3 cups of low sodium chicken stock. Cook by the number of pounds your lamb rack weighs. This cooked perfectly at 15 minutes.
Mushroom sauce
10 white mushrooms, halved
1/2 Trader Joe’s portobello condensed cream carton
Celtic sea salt & cracked pepper
1/2 cup 2% milk or half & half
2 tbsp unsalted butter
1 tbsp of corn starch and water (to thicken sauce)
•In a separate pot, melt the butter entirely down then add the 10 halved mushrooms. Cook until water is released. Then add the 1/2 cup of milk and stir. Add the condensed mushroom. Add sea salt and cracked pepper. In a separate bowl, add corn starch and water then whisk until dissolved. Add the corn starch while continue to stir until sauce is thickened. I added the au jus from the lamb to the sauce and it was perfect.
Mashed Potatoes with chives
2 handfuls of halved mini potatoes, rinsed and scrubbed
1 cup 2% milk or half & half
Celtic sea salt & cracked pepper
3 tbsp unsalted butter
Optional: garnish with chives
•In a separate pot, boil the water, then add the small golden potatoes, let them cook on high for about 15-20 minutes. Then drain the water from the pot. Start mashing the potatoes, add half and half, then stir. Add butter, salt, and pepper.
