My Favorite Harvest Salad 🎃🍂
This is a salad recipe from a content creator named Lauren Batsch. I watched her Tik Tok video back in fall 2023 and absolutely loved her salad idea. Even when it’s not harvest season, I still love to eat this salad all year round. This time, I omitted the chickpeas and quinoa to save time. It’s still so good with or without those ingredients. RECIPE:
* 1 small butternut squash peeled, seeded, and diced (I use 1 bag frozen organic butternut squash sometimes)
* ½ tsp olive oil
* salt and freshly ground pepper
* 1 cup cooked quinoa
* 2 cups chopped kale leaves (I use Tuscan Kale, boiled mine for 5 minutes to remove bitterness)
* 2 small apples cored and sliced or diced (I used 3 honey crisp apples)
TOPPINGS:
* ¼ cup dried cranberries
* ¼ cup pecans chopped
* ⅓ cup crumbled feta cheese
* 1½ tbsp roasted pumpkin seeds ( I used organic sprouted pumpkin seeds, doused in EVOO)
FOR THE APPLE CIDER VINAIGRETTE:
* 3 tbsp extra virgin olive oil
* 2½ tbsp apple cider vinegar
* ¾ tbsp honey or maple syrup (used honey)
* 1½ tsp Dijon mustard
* 1 garlic clove minced
* salt and ground black pepper
