🐟Teriyaki Miso Salmon w Mashed Potatoes & Stir Fry
I know that side dish of bleached eggplants look like a strange color but they were so good! I used side dishes I made a night ago which consisted of mashed potatoes with chives and veggie stir fry. My boyfriend cooked the salmon while I prepared the glaze. It’s seriously a delicious blend of teriyaki and miso. I definitely recommend at least try that with salmon haha. Obsessed and thinking of putting it on chicken next time.
Ingredients
Veggie Stir Fry
Japanese eggplants
Assortment of mushrooms including shiitake, enoki
Baby bok choy
Coco aminos
Mashed Potatoes with Chives
Red potatoes
Heavy cream
Sour cream
Butter
Chives
Sea salt & pepper
Glaze
• 1 tbsp white or yellow miso paste
• 1.5 tbsp mirin
• 1 tbsp soy sauce or coconut aminos
• 1 tbsp water
• 1.5 tsp coconut sugar
• 1 tsp honey
• 1 tsp grated ginger and ground
• 1 small garlic clove, grated
Instructions
1. Make the glaze:
• In a small bowl, whisk all ingredients.
2. Prep salmon:
• Pat salmon dry. Lightly salt. You can score the skin if using skin-on salmon for extra crispiness.
3. Sear salmon:
• Heat your cast iron skillet over medium heat.
• Add a bit of EVOO
• Place salmon skin-side down (or presentation side down if skinless).
• Sear 3–4 minutes until golden.
4. Flip + glaze:
• Flip salmon gently.
• Lower heat slightly &brush the glaze over the top.
• Let it cook another 3–4 minutes while the glaze thickens and bubbles.
5. Caramelize
• Spoon extra glaze into the pan and tilt slightly to baste the salmon.
