My bf made us this lovely lemon breaded cod with sautéed spinach and kimchi pancakes from Costco. Simple and basic but the kimchi pancake was a perfect addition to dinner. The kimchi pancakes are new favorites to our diet.
Ingredients
Kimchi pancakes Costco
2 lbs Cod
3 eggs
1 cup buttermilk
Panko add lemon zest
1 Lemon juice/zest/garnishing
Spinach
Salt, garlic, and onion powder
Chopped fresh chives

Instructions
•Rinse and pat dry fish. Then dip in buttermilk, egg wash, and breadcrumb coating. Air fry cod at 400 degrees cod 15-20 minutes until golden. Fry kimchi pancakes in EVOO, crispier the better. Add evoo, salt, garlic, and, onion powder to spinach and cook until wilted.
