I love mediterranean food so much. It plays a huge part in my diet since it’s filled with whole, fresh, and yummy seasoned foods. I made these recipes with what’s currently in my fridge. Here’s 4 Mediterranean diet recipes for spring, I hope you enjoy 💛
1) Mediterranean Chicken Orzo Bowl (Serves 2–3)
Ingredients:
• 1 cup orzo
• 2 cups chicken broth
• 2 grilled chicken breasts (sliced, cooked already)
• 2 cups mixed veggies (zucchini, onion, etc.)
• 2 tbsp olive oil
• Juice of ½ lemon
• Salt, pepper, garlic powder, oregano
• Garnish with tzatziki and/or micro greens, lemon juice, and feta cheese (if desired)
Instructions:
1. Simmer orzo in chicken broth (like pasta) for ~8–10 min until tender. Drain if needed.
2. Sauté veggies in chicken broth + seasonings until tender.
3. Season and grill stove for 7 minutes.
4. Toss orzo with a little olive oil + lemon + salt/pepper. Plate orzo, add veggies + chicken.
5. Top with garnishes & enjoy!
2) Mediterranean Chicken Shawarma Naan Flatbread
Trader Joe’s Frozen Plain Naan Bread
Grilled chicken
Pickled red onions
Sliced Kalamata olives
Cubed manchego cheese
Garnish with basil + tzatziki
Instructions: Let naan defrost then rub shawarma seasoning and spray EVOO. Next, begin adding your toppings and air fry at 350 degrees for 6 minutes. Make sure to keep an eye out so it doesn’t burnt but just until it’s crisp + cheese is melted.
3) Mediterranean Antipasto Salad (Serves 2–3)
Ingredients:
• ½ cup cucumber, chopped
• ½ cup cherry tomatoes, halved
• ¼ cup Kalamata olives, pitted
• ¼ cup salami, sliced or nugget-sized
• 2–3 pepperoncini, sliced
• 2 tbsp pickled red onion
• 1 tsp red wine vinegar (with pomegranate)
• 1 tsp fresh lemon juice
• 1 tbsp extra virgin olive oil (EVOO)
• ¼ cup Manchego cheese, cubed
• Pinch sea salt + black pepper
Instructions:
1. Chop all veggies, salami, and cheese; place in a medium bowl.
2. Add red wine vinegar, lemon juice, and EVOO.
3. Season with salt and pepper, then stir gently until combined.

Instructions:
