1 tbsp olive oil

5 cloves garlic, minced

1½ tsp Mediterranean seasoning or Italian seasoning

½ tsp paprika (optional, for color)

Sea salt + black pepper

1½ cups heavy cream

4 tbsp butter

1 cup freshly grated Parmesan cheese

¼ tsp garlic powder

Fresh parsley chopped

* Juice of ½ lemon

Instructions

1.Cook the fettuccine

Bring a large pot of salted water to a boil.

Cook the fresh fettuccine for 2–4 minutes until al dente.

Reserve ½ cup pasta water, then drain.

2. Cook the shrimp

Pat the shrimp dry.

Toss with Mediterranean seasoning, paprika (if using), salt, and pepper.

Cook shrimp 1½–2 minutes per side, just until pink. Remove and set aside.

In the same skillet, reduce heat to medium.

Add 4 tbsp butter and minced garlic. Sauté for about 30 seconds.

Pour in the heavy cream and gently simmer for 3–5 minutes.

Whisk in Parmesan cheese a little at a time until smooth.

Stir in garlic powder, a pinch of Italian seasoning, and black pepper.

If the sauce is too thick, add a splash of reserved pasta water.

Fold the shrimp back in and cook for another minute until warmed through.

Finish with chopped parsley and an optional squeeze of fresh lemon juice.

... Read moreIf you're looking to elevate your shrimp fettuccine Alfredo, a few additional tips can enhance both flavor and texture. First, seasoning the shrimp with a blend of Italian seasoning, paprika, garlic powder, and onion powder—as suggested in the recipe's seasoning step—adds a depth of Mediterranean flavor that works beautifully with the creamy Alfredo sauce. Patting the shrimp dry before cooking is key to achieving a nice sear, so they develop a slightly crispy exterior without steaming. Using fresh fettuccine pasta significantly reduces cooking time while providing a tender yet firm bite. Remember to reserve some pasta water before draining; this starchy water is excellent for loosening up the Alfredo sauce if it thickens too much, giving it a silky consistency that clings perfectly to the fettuccine. When making the Alfredo sauce, cooking the garlic just until fragrant (about 30 seconds) before adding heavy cream prevents bitterness and creates a smooth, aromatic base. Whisking in the Parmesan cheese gradually ensures the sauce stays creamy and lump-free. Adding a small pinch of Italian seasoning and black pepper balances the richness. Finishing the dish with freshly chopped parsley and a squeeze of lemon juice provides a fresh, vibrant contrast to the creamy sauce and enhances the seafood flavors. From my experience preparing similar dishes, the lemon juice brightens the palate and makes the whole meal feel lighter. This recipe is fantastic for busy weeknights because it combines simple ingredients with quick cooking steps to deliver a restaurant-quality meal at home. If you want to personalize it, consider adding a handful of sautéed spinach or sun-dried tomatoes for color and extra nutrients. Pairing this dish with a crisp green salad and chilled white wine makes for an elegant but effortless dinner everyone will love.
