A vibrant and wholesome treat made with smooth, naturally sweet purple sweet potato filling layered generously between soft and fluffy breads.
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀;
Purple sweet potato
3 slice of bread (I used wholemeal bread)
Milk
1 egg
𝗦𝘁𝗲𝗽𝘀:
- Steam the sliced sweet potato for 15 mins until soft.
- Add milk and mash them together (add milk along the way to desired consistency)
- Spread sweet potato on first slice of bread
- Add another piece of bread & spread another layer of sweet potato
- Add the 3rd piece aka the last piece
- crack 1 egg, add milk and beat them together
- Coat the bread evenly all over with the beaten egg.
- Heat oil/ butter in pan (if butter, until melted before you add the bread)
- Add the bread and pan fry about 3 mins until it’s golden brown and flip over to pan fry the another side.
- Once all sides is golden brown, remove from pan.
- Cut accordingly to desired size and it’s ready to serve!
