... Read moreOkay, so I have to share my absolute favorite go-to recipe for those days when you just need a hug in a bowl! This slow cooker shredded chicken with homemade gravy and mashed potatoes isn't just easy; it's pure comfort food perfection. Seriously, if you're looking for an 'easy meal' that tastes like you spent hours in the kitchen, this is it. I usually start with about '3-4 chicken breast' – boneless, skinless is my preference for shredding. The less fuss, the better, right? I place them in my slow cooker and then comes the magic part: the seasoning! I generously 'spread all over chicken' a full 'ranch seasoning packet'. This is where a lot of the flavor comes from. Then, I add a sprinkle of 'salt', a good dash of 'pepper', a teaspoon or so of 'garlic powder' (because garlic makes everything better!), and a touch of 'Italian seasoning' for that extra aromatic kick. It really infuses into the chicken beautifully. To make sure there's enough liquid for both cooking and that incredible gravy, I add '1 cup of water' to the pot. The beauty of a slow cooker is that it does all the hard work for you. I just set it and forget it, letting the chicken 'cook 4-6 hours' on low. When the timer goes off, the chicken is incredibly tender – literally falling apart with just a fork. 'After 4-6 hrs, shred your chicken' right there in the pot using two forks. This is where all those delicious juices and seasonings get mixed back into the meat. Now, for the star of the show: the gravy! This is where you get incredible 'gravy from chicken drippings'. Don't drain that precious liquid! Those drippings are packed with flavor. To transform it into a rich gravy, I usually remove the shredded chicken for a moment. Then, I make a quick slurry with a tablespoon of cornstarch (or flour) mixed with a little cold water. Pour this into the hot drippings, whisking constantly over medium heat on the stovetop (or you can use the slow cooker on high if it has that function). It thickens up beautifully in just a few minutes, creating a savory, thick gravy that's absolutely divine. You might want to taste and adjust the seasoning here, adding a bit more salt or pepper if needed. And what's shredded chicken and gravy without perfect mashed potatoes? They are the ultimate pairing, soaking up all that wonderful gravy. I always make a fresh batch of creamy 'mashed potatoes' to 'serve it over'. Sometimes I add a touch of cream cheese or a splash of milk and butter to my potatoes for extra richness. The combination of the tender, flavorful chicken, that luscious homemade gravy, and fluffy mashed potatoes truly makes for one of the most satisfying and 'easy meals with mashed potatoes and gravy' you'll ever have. It’s my absolute favorite way to turn simple ingredients into a comforting masterpiece. Give it a try, you won't regret it!
