Fall is here, and I am using up the last of my fresh rubarb. This is another of my “I have made so many times, I don’t have an exact recipe anymore” favorites.
Spray a 9x13 pan, I prefer glass, with cooking spray.
Layer 1: fresh or frozen rubarb
Layer 2: sprinkle with sugar, roughly 1/4 cup
Layer 3: cake mix. (I used lemon this time, but white or regular yellow works too.)
Layer 4: 1 stick of butter sliced into pats and placed evenly over the top.
Layer 5: 1 pint half and half (you can use milk also)
Bake according to cake mix instructions, or until toothpick comes out clean.
We serve this warm with ice cream, whipped topping, or just plain.
