Chipotle in adobo MY WAY
No, my version won’t look like the store-bought one because I love mine this way. BUT it’s easy to make it the store way by simply NOT blending the ingredients you fried. And just place them in the jar along with some whole, plumped morita, and blend the rest of the ingredients, then pour into the jar, omitting the whole allspice and peppercorn.
This will last me a month in the fridge 😍

Making chipotle in adobo at home is incredibly rewarding and allows you to adjust flavors based on your preferences. One tip I’ve found helpful is to fry your onion, garlic, and tomato in oil until they’re fragrant and soft. This step enhances the sauce's depth by bringing out the natural sweetness and adds a smoky undertone once blended with the morita chiles. When preparing the morita chiles, boiling them with a dry bay leaf until they become soft and plump is key. This softening helps the chiles blend smoothly, creating a rich, full-bodied sauce. Leaving a few whole moritas in the jar adds both visual appeal and bursts of intense flavor whenever encountered. For seasoning, balancing salt, sugar, and vinegar is essential to match your taste and preserve the sauce well in the fridge for up to a month. The optional whole peppercorn and allspice contribute subtle aromatic notes that elevate the overall complexity. If you prefer a more rustic, store-style appearance and texture, try not blending the fried ingredients and instead add them whole to the jar. Blend only the softened chiles with salt, sugar, and vinegar. This method adds texture and a more traditional presentation. From personal experience, homemade chipotle in adobo is incredibly versatile—perfect as a marinade, in stews, or to add smoky heat to sandwiches and tacos. Making it yourself also means you can control the heat level by selecting fewer or milder chiles, making it suitable even if you prefer less spicy food. Plus, it’s so satisfying to have a jar of this vibrant, flavorful sauce ready in your fridge whenever you need it!
