Hey everyone! So, you saw my post about making lentejas for lunch today? Well, I wanted to share a bit more about how I make this comforting dish. It’s truly one of my go-to meals, especially when I want something hearty, healthy, and easy to prepare. There’s nothing quite like a warm bowl of homemade lentil soup to make your Lunch Time special, even on a busy weekday. Making delicious lentejas at home in Texas doesn't have to be complicated. I remember when I first started cooking them, I thought it would be a huge ordeal, but it’s actually surprisingly simple. Here’s my basic recipe that you can easily adapt to your taste! What you'll need: 1 cup brown or green lentils, rinsed 6 cups vegetable or chicken broth (or water) 1 tablespoon olive oil 1 medium onion, diced 2 carrots, peeled and diced 2 celery stalks, diced 2-3 cloves garlic, minced 1 (14.5 ounce) can diced tomatoes, undrained 1 teaspoon cumin 1/2 teaspoon smoked paprika (optional, but I love it!) Salt and black pepper to taste Fresh cilantro or parsley for garnish (optional) My simple steps to perfect lentejas: Prep the lentils: First things first, rinse your lentils thoroughly under cold water. This helps remove any debris and ensures they cook evenly. No need to soak them overnight for this recipe, which is a huge time-saver! Sauté the aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Cook them for about 5-7 minutes, stirring occasionally, until they start to soften. This step is crucial for building a flavorful base! Add garlic and spices: Stir in the minced garlic, cumin, and smoked paprika. Cook for another minute until fragrant. Be careful not to burn the garlic! Combine everything: Pour in the rinsed lentils, diced tomatoes (with their juice!), and the broth. Give it a good stir to combine all the ingredients. Simmer to perfection: Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 30-40 minutes, or until the lentils are tender. The cooking time can vary a bit depending on your lentils, so taste them after 30 minutes. If it gets too thick, you can add a little more broth or water. Season and serve: Once the lentils are tender, taste and adjust the seasoning with salt and pepper. I usually add a good pinch of each. Serve hot, perhaps with a sprinkle of fresh cilantro or a squeeze of lime juice for an extra zing! This recipe is so versatile. Sometimes I add a chopped potato or a handful of spinach towards the end of the cooking time for extra veggies. It’s a complete meal on its own, but it also goes wonderfully with a side of crusty bread. It’s truly a fantastic dish for a comforting Lunch Time, and the leftovers are even better the next day!
