Meatloaf Recipe 🤌
Here is my ✨Copycat Cracker Barrel✨ meatloaf
Ingredients: [this is a double recipe so cut in half if preferred for your family]
{for the meatloaf}
Beef (I use 2-3 lbs for meals for a couple days)
1 cup chopped Yellow onion
1/2 cup diced Green bell pepper
6 Eggs
8 oz Sharp Cheddar Cheese
1/2 cup Whole milk
4 sleeves of crushed Ritz crackers
Salt & pepper & any other spices you may want 🤌🏻
{for glaze topping — or use ketchup if preferred}
1/2 cup Ketchup
1/2 cup Brown sugar
1 tbsp Yellow mustard
1 tsp Worcestershire sauce
Tools needed: knife, cutting board, measuring cups/spoons, big mixing bowl
Directions:
1) preheat oven to 350 degrees F & line a baking pan with parchment paper. You’re gonna want something with high walls cause this is a greasy dish. I usually use paper towels to soak up the extra grease after it’s cooked before I add the glaze.
2) in a small bowl, whisk together ketchup, brown sugar, yellow mustard & worcestershire sauce.
Set this aside for later
3) get a LARGE mixing bowl, I’m telling you, go to dollar tree and get one of those BIG serving bowls. This stuff is messy to mix and the crumbs get everywhere 🤦🏻♀️
Using clean or gloved hands, combine together beef (I cut mine up into chunks so it was easier to mix), onion, green pepper, eggs, cheese, milk & crackers.
Mold & place into your baking dish.
4) Bake for 30 minutes @ 350 degrees F then remove to add the glaze topping. Return to oven for 30 more minutes or until your meatloaf is temping at 160 degrees or higher.
Allow the loaf to rest for 10 minutes then you can serve with potatoes & broccoli and macaroni & cheese!
