A bold creamy & Addictive Jalapeño Popper Potato Salad

We make this when we get a bit bored of normal potato salad or for spring, summer dinners Or for a party or bbq side .

This has creamy potatoes, crispy bacon, cheese, Scallions, and a spicy kick of Jalapeños.

It’s a fun twist on a classic .

Ingredients :

Potatoes

Jalapeños

Bacon

Scallions

Cheese

Creamy Mixture:

1 Cup of Sour Creama

1/2 cup Mayo

4oz of Softened Cheese

Pickle Juice

Salt & Pepper

Garlic

How I made it :

I peeled the potatoes into cubes and boiled them .

I fried up the bacon

I then roasted the jalapeños & cut them up

While they were cooking I cut up the scallions & grated the cheese

I drained the potatoes when they were cooked and put them in a bowl . When the bacon was ready I also cut that up and added it into the potatoes, then the cheese and scallions .

Then in another bowl I added the cream cheese, sour cream, Mayo, pickle juice , garlic & your choice of seasoning .

When the potatoes are not steaming but warm I add some creamy mixture and mix it together .

Refrigerate for a few hours .

Add cheese , jalepenos and scallion on top once serving.

Tip: only add half the creamy mixture when potatoes are warm as it absorbs the flavor while warm but then you have the other half when cooled and ready to serve so it’s creamy .
