... Read moreIf you're a fan of vegetable dips, this roasted garlic veggie dip made with cottage cheese is an excellent choice for a nutritious and flavorful snack. The dip combines roasted garlic, herbs like parsley, oregano, and thyme, with creamy cottage cheese and a touch of mayo to create a rich and smooth texture. One of the best parts is its versatility — it can be served either cold or warmed up, making it a great option for any season. From personal experience, roasting the garlic before adding it to the dip really enhances the flavor, giving it a sweet, mellow, and slightly nutty taste that raw garlic just can't match. You can blend the dip for a smoother consistency or leave it a little chunky if you prefer more texture. Also, don't hesitate to add extra cheddar or Parmesan cheese on top before baking the dip for a golden, cheesy crust. This dip pairs wonderfully with an assortment of raw veggies like carrots, cucumbers, bell peppers, and celery. Eating raw vegetables with a creamy dip is a satisfying way to increase your veggie intake, especially if you typically find it hard to eat vegetables alone. Plus, the protein from cottage cheese makes this snack more filling and balances the flavors. I sometimes prepare a batch in an oven-safe dish and bake it briefly at 350 degrees Fahrenheit until it’s nicely melted and bubbling. Eating it warm adds a comforting, indulgent touch after a long day. Just be mindful not to overcook it, so the dip remains creamy and doesn’t dry out. Overall, this roasted garlic veggie dip is a super-easy, delicious, and adaptable recipe. Whether served chilled as a refreshing dip or warmed up for a cozy treat, it makes raw vegetables more enjoyable and helps create a healthier snacking habit.

I'm lactose intolerant also. it's getting worse. Where do you find lactose free cottage cheese? I love cottage cheese. I can't find anywhere even on line if I'm looking in the right place. By the way I live in the boonies.
