Fun fact: Coconut water can turn pink because it contains polyphenols—natural antioxidants. When exposed to oxygen, an enzyme called polyphenol oxidase reacts with those polyphenols. That reaction causes the pink color to develop over time. It’s natural, and it actually means the coconut water is fresh and full of nutrients. Not all coconut water does this, it has to be minimal in processing. Processed coconut water kills the enzyme that makes this happen.

Processed coconut water (like the kind that’s pasteurized or ultra-filtered) doesn’t turn pink because the enzyme polyphenol oxidase gets deactivated during processing. That means it can’t react with the polyphenols, so no pink color—and fewer antioxidant benefits.
