🍲 Herby Chicken & Pasta Soup

🛒 Ingredients

• 2 cups water (plus more if needed)

• 1 whole tomato

• 1 bunch parsley

• 1 bunch cilantro

• Fresh basil (to taste)

• 1 whole onion, chopped

• 5 garlic cloves

• 1–2 tbsp honey

• 2 uncooked chicken breasts, diced

• Small pasta (star pasta or any small shape)

🌿 Seasonings (to taste)

• Cumin

• Paprika

• Rosemary

• Thyme

• Black pepper

• 1 packet sazon

👩‍🍳 Instructions

1. Blend the base

• In a blender, combine:

• 2 cups water

• Tomato

• Parsley, cilantro, basil

• Onion

• Garlic

• Honey

• Blend until smooth and liquid.

2. Start the soup

• Pour the blended mixture into a large pot.

• Add extra water if you want a thinner broth.

3. Season it up

• Add cumin, paprika, rosemary, thyme, black pepper, and sazon.

• Stir well and bring to a gentle simmer.

4. Add chicken

• Add diced raw chicken breast.

• Let it cook through in the simmering broth (about 10–15 minutes).

5. Add pasta

• Stir in your pasta.

• Continue simmering until pasta is tender.

6. Final taste check

• Adjust salt, pepper, or seasoning as needed.

• Add a squeeze of lime at the end for brightness

• Toss in carrots or corn for extra texture
