Strawberry cheesecake crumble cookies 🍓
Yield: about 10–12 cookies
Ingredients:
✨Cookie Dough:
1/2 cup (1 stick) unsalted butter, softened
3/4 cup granulated sugar
1 large egg, room temperature
1 tsp vanilla extract
1 3/4 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
✨Cheesecake Filling:
8 oz cream cheese, softened
4 tbsp granulated sugar
1 tsp vanilla extract
✨Fresh Strawberry Topping
1 cup fresh strawberries, diced
2–3 tablespoons granulated sugar
✨Instructions:
1. In a bowl, mix the diced strawberries with sugar. Let them sit for 10–15 minutes so they release their natural juices. Set aside.
2. In a large bowl, cream the butter and sugar until light and fluffy.
Add the egg and vanilla and mix well.
3. Mix in the flour, baking powder, baking soda, and salt until a soft dough forms.
4. Scoop about 2 tablespoons of dough, roll into a ball, and slightly flatten on a parchment-lined baking sheet.
5. Bake at 350°F (175°C) for 12–14 minutes, until the edges are lightly golden. Let the cookies cool completely.
6. Beat cream cheese and add sugar and vanilla, and mix until creamy.
9. Spread or pipe cream cheese frosting on top of each cooled cookie, then spoon the sweet strawberry mixture over the frosting.
10. Sprinkle a little crushed graham crackers over the strawberries for a cheesecake-style finish.
