If you're anything like me, you're constantly looking for dinner recipes that are both delicious and easy, especially during those crazy weeknights. This recipe truly is my secret weapon, and it practically cooks itself in the Instant Pot. I remember the first time I heard about 'crack chicken,' I was intrigued. A keto-friendly dish that's supposedly addictive? Sign me up! And let me tell you, it lives up to its name. The combination of tender chicken, creamy cream cheese, tangy ranch, and sharp cheddar is just phenomenal. It’s rich, savory, and incredibly satisfying. Here's how I whip up this weeknight wonder: First, I grab about two pounds of boneless, skinless chicken breasts or thighs. I prefer thighs for extra flavor and moisture, but breasts work perfectly too. I place them at the bottom of my Instant Pot. Next, I add one block (usually 8 ounces) of cream cheese – make sure it’s full-fat for that classic keto creaminess! Then, a packet of ranch seasoning mix goes in.
