Keto Mint-Chip Freezer Fudge

Ingredients:
1/2 cup coconut butter (softened)
1/4 cup virgin coconut oil
1 tbsp unsalted butter (optional for creamier taste)
1 tbsp unflavored gelatin (or 1 ½ tsp beef gelatin powder)
2 tbsp hot water
2 tbsp powdered erythritol (or monk fruit blend, adjust to taste)
1/2 tsp peppermint extract (not mint, unless you prefer it)
1/4 cup sugar-free dark chocolate chips (like Lily’s or ChocZero)
A few drops natural green food coloring (optional, for minty color)
Pinch of sea salt
Instructions:
1. Bloom the gelatin
In a small bowl, stir gelatin with hot water. Let it bloom and thicken (about 3–5 mins).
2. Melt base ingredients
In a saucepan over low heat, melt coconut butter, coconut oil, and optional butter until smooth. Stir in the bloomed gelatin until completely dissolved.
3. Flavor & sweeten
Remove from heat. Whisk in peppermint extract, sweetener, sea salt, and food coloring (if using). Taste and adjust sweetness or mintiness as desired.
4. Add the chips
Let the mixture cool for 1–2 mins, then stir in chocolate chips. (Too hot and they’ll melt.)
5. Freeze it
Pour the mixture into a parchment-lined loaf pan or silicone mold. Tap to flatten. Freeze for 1–2 hours until firm.
6. Slice & store
Once solid, cut into 16 small squares. Store in a sealed container in the freezer. Let soften a few minutes before eating.
Notes:
Texture: Creamy but firm, like a cross between fudge and a frozen fat bomb.
Optional Boost: Add collagen powder or MCT oil for extra keto benefits.
