Brown Sugar & Butter Glazed Pork Chops

The Ingredients:
For the pork chops:
4 thick‑cut boneless pork chops, 1‑inch thick — about 6–8 oz each like in your tray
1 tsp salt + ½ tsp black pepper — fresh ground from the grinders in your pic
For the glaze:
4 tbsp butter — unsalted or salted both work
4 tbsp brown sugar, packed — light or dark
1 tbsp soy sauce
1 tbsp Worcestershire sauce
1 tbsp oil for searing — vegetable or avocado oil

The Method:
Bring chops to temp: Take pork chops out 20 min before cooking. Pat bone dry with paper towels. Wet chops = no crust. Season both sides liberally with salt and pepper.
The Sear: Heat a 12‑inch cast iron skillet over medium‑high until it’s ripping hot. Add 1 tbsp oil. It should shimmer right away. Add pork chops — don’t crowd, do 2 at a time if needed. Sear 4–5 min per side until you get that dark, delicious crust like in your bottom‑left photo. You’re looking for deep golden brown, not gray.
Set aside: Transfer chops to a plate. They won’t be fully cooked yet — that’s fine. Tent loosely with foil.
The Glaze: Lower heat to medium. In the same pan, add 4 tbsp butter. Once melted, whisk in brown sugar, soy sauce, and Worcestershire. Use your whisk to scrape up all those tasty browned bits from the bottom — that’s pure flavor. Let it bubble 1–2 min until it thickens into a syrup. It should coat the back of a spoon.
The Baste: Return pork chops + any juices to the skillet. Tilt the pan and use a spoon to constantly pour that bubbling glaze over the meat. Do this for 3–4 min, flipping once. The glaze will get thicker and stickier. Chops are done at 145°F internal — still juicy with a hint of blush.
Rest & serve: Remove chops to plates. Let rest 5 min. Spoon any extra glaze from the pan over the top. That glossy finish in your bottom‑right photo comes from resting + the final glaze.
Plate it: Serve with mashed potatoes and green beans .
That sauce is amazing drizzled over the potatoes too.
Pro Tips So It Comes Out Perfect:
Don’t burn the sugar: Once the brown sugar goes in, keep it at medium or medium‑low. High heat = bitter burnt sugar. You want “bubbling syrup,” not smoke.
Thick chops only: 1‑inch thick is key. Thin chops overcook before the glaze reduces. If yours are ½‑inch, sear 2 min per side and baste only 1–2 min.
Thermometer wins: 145°F = juicy. 160°F = dry. Pull them at 140°F and let carryover finish the job while they rest.
No soy? Swap with 1 tbsp extra Worcestershire + 1 tsp balsamic vinegar. Different flavor but still great.
