Steak & Shrimp Loaded Cheesy Baked Potato
Servings: 2 huge portions or 4 regular
The Baked Potato Base:
Ingredients:
2 extra-large Russet potatoes, ∼12–14 oz each
1 tbsp olive oil
1 tsp coarse kosher salt
2 tbsp butter
¼ cup sour cream
½ cup sharp cheddar, shredded
Salt & pepper to taste
Instructions:
Bake: Preheat 425°F. Scrub potatoes, dry well. Poke 8–10 times with fork. Rub with oil + salt. This makes the skin crispy + seasoned like a steakhouse. Bake directly on rack 60–70 min until skin is crisp and you can pierce easily with a knife.
Fluff: Cut a slit lengthwise. Push ends toward center to open. Scoop most of the flesh into a bowl, leaving ¼” shell so it holds shape.
Mash filling: Add butter, sour cream, cheddar, salt, pepper to the scooped potato. Mash until creamy but still chunky. Spoon back into skins, mounding high. Keep warm.
Cajun Steak:
Ingredients:
12 oz NY strip or ribeye, cut into 1” bite-size pieces
1 tbsp Cajun seasoning — Tony Chachere’s or Slap Ya Mama work great
1 tbsp olive oil
1 tbsp butter
1 clove garlic, smashed
Instructions:
Season: Pat steak dry. Toss with Cajun seasoning. Let sit 10 min.
Sear: Heat cast iron or heavy skillet screaming hot. Add oil. Add steak in single layer — don’t crowd. Sear 2 min undisturbed for crust, flip 1–2 min for medium. Add butter + garlic last 30 sec, baste. Remove, rest.
Cajun Garlic Shrimp
Ingredients:
12 oz jumbo shrimp, 16/20 count, peeled + deveined, tails on
1 tbsp Cajun seasoning
1 tbsp olive oil
1 tbsp butter
1 tsp lemon juice
1 clove garlic, minced
Instructions:
Season: Pat shrimp dry. Toss with Cajun seasoning.
Sear: Same pan as steak, wipe out if needed. Heat oil over med‑high. Add shrimp 1–2 min per side until pink with blackened edges. Add butter + garlic + lemon last 30 sec. Remove fast — overcooked shrimp = rubber.
Fajita Peppers & Onions:
Ingredients:
½ large yellow onion, sliced ¼” thick
½ green bell pepper, sliced
½ red bell pepper, sliced
1 tbsp olive oil
½ tsp Cajun seasoning
Pinch of salt
Instructions:
Char: Same pan, med‑high heat. Add oil, then peppers + onions. Don’t stir for 2 min to get char like in pic. Season with Cajun + salt. Sauté 5–6 min total until tender with dark edges.
Cajun Cheese Sauce
Ingredients:
2 tbsp butter
2 tbsp all‑purpose flour
1 cup whole milk, warmed
¾ cup sharp cheddar, shredded
¼ cup pepper jack, shredded — for spice
½ tsp Cajun seasoning
¼ tsp garlic powder
Pinch cayenne for heat, optional
Salt to taste
Instructions:
Roux: Melt butter in saucepan over med heat. Whisk in flour. Cook 1 min.
Sauce: Slowly whisk in warm milk. Simmer 2–3 min until thick. Turn heat to low.
Cheese: Remove from heat. Stir in cheddar + pepper jack handful at a time until melted. Add Cajun seasoning, garlic powder, cayenne. Salt to taste. If too thick, add splash of milk. If you want pourable.
Assembly :
Potato: Place loaded potato on plate.
Layer: Top with seared steak pieces, then peppers + onions, then Cajun shrimp.
Sauce: Pour that warm Cajun cheese sauce all over so it drips down the sides.
Garnish: Sprinkle fresh chopped parsley like in your pic + extra cracked black pepper.
Pro Tip:
Order matters: Cook potatoes → steak → peppers/onions → shrimp → sauce last so everything’s hot. Shrimp and sauce only take 5 min combined.
Potato too soggy? After baking, slice open immediately to let steam escape. Keeps skin crisp.
No cast iron? Use hottest pan you have. Sear = flavor.
Make it spicier: Add 1 tsp hot sauce to cheese sauce or extra cayenne to Cajun seasoning.
Shortcut: Air fryer the potato 400°F for 45 min if you’re in a rush.
