同じ「チョコチップパウンドケーキ」でも、失敗ポイントはだいたい2つでした。①紙型だと横に広がって形が崩れる、②チョコチップ（板チョコ）が沈んで下に固まる。私が安定したのは“生地の状態”と“入れ方”を揃えることでした。 ■プロっぽく仕上げるために意識した3つのこと 1) 生地は「混ぜすぎない」より「ダマが残らない」を優先 ホットケーキミックスは混ぜすぎ注意と言われますが、粉っぽさが残ると膨らみムラが出て、結果的にチョコが沈みやすく感じました。粉を入れて一度やさしく混ぜたら、仕上げに“しっかり混ぜる回数を決める（例：20回）”と毎回の再現性が上がりました。なめらかで少しとろっと落ちるくらいが目安です。 2) チョコは5mm〜1cmの「角切り」＋温度管理 板チョコを細かくしすぎると溶けやすく、逆に大きすぎると重くて沈みやすい印象でした。5mm〜1cmくらいの角切りがちょうどよかったです。さらに、刻んだチョコは冷蔵庫で冷やしておくと溶けにくく、生地の中で位置が安定しやすかったです（夏場は特に）。 3) 「沈まない」入れ方は“層にする”のがいちばん簡単 チョコを最初に全部混ぜ込むより、紙型に「生地→チョコ→生地→チョコ…」と交互に入れると、沈みにくさが体感で変わりました。ポイントは上の層ほどチョコを少し多めにすること。上に重心を作ると、焼いている間に下へ集まりにくいです。 ■紙型で横に広がる対策 100均の紙型は柔らかいので、私は“紙型を2枚重ね”にすると形が整いやすかったです。天板にのせて運ぶときも歪みにくく、側面がまっすぐ出やすくなりました。 ■きれいに割れる「真ん中の切り込み」 焼き途中（表面が固まってきたタイミング）に中央へスッと切り込みを入れると、狙った場所が割れて見た目が一気にパウンドケーキらしくなりました。ナイフは軽く油をつけるとくっつきにくいです。 ■仕上げとラッピングのコツ 焼き上がりはすぐ切らず、紙型のまま完全に冷ますのがおすすめ。温かいうちは生地が崩れやすく、断面も荒れがちでした。完全に冷めてから切ると、黄金色の生地にチョコチップがきれいに出て「殿堂入りっぽい」見た目になります。プレゼントなら、冷めてからラップ→袋に入れるとしっとり感もキープできました。
