... Read moreOkay, so who else struggles with finding a breakfast that's actually satisfying AND healthy? I used to grab whatever was quick, but then I'd be starving an hour later. That’s why this high-protein & high-fiber French Toast Bake has become my absolute go-to. It’s truly a game-changer for my mornings! Seriously, it ticks all the boxes. The protein keeps me full for hours, preventing those mid-morning snack attacks, and the fiber is amazing for digestion and keeping my energy steady. No more sugar crashes! Plus, it feels like a treat, not just 'another healthy meal.' It's like having dessert for breakfast, but without any guilt. One of my favorite things about this French toast bake is how perfect it is for meal prep. I usually whip up a batch on Sunday, and I have delicious, ready-to-go breakfasts for half the week. Just a quick warm-up in the microwave or oven, and I'm set! It saves so much time during busy weekdays. I often assemble it the night before, cover it, and pop it in the oven in the morning – makes mornings feel so much more relaxed and less rushed. Beyond the basic recipe, I've found so many ways to customize this high-protein & high-fiber French Toast Bake to keep things interesting. If you're not a raspberry and blueberry fan, try sliced bananas and a sprinkle of walnuts, or even diced apples with a dash of extra cinnamon. For protein powder, vanilla is classic, but chocolate protein powder with some cocoa powder in the mix makes for a decadent, almost dessert-like breakfast! I’ve also experimented with different kinds of milk – almond milk or oat milk work beautifully if you’re looking for a dairy-free option without compromising on texture. For those looking to boost the fiber even more, consider adding a tablespoon of chia seeds or ground flaxseed to the egg mixture; they'll also help thicken it slightly. If you're gluten-intolerant, finding good high-fiber, gluten-free bread is key. Schär's is a great option, but any sturdy, dense gluten-free bread will work well. Just make sure it can soak up that delicious custard without getting too soggy, giving you that perfect French toast consistency. When it comes to serving, I love a drizzle of sugar-free maple syrup or a dollop of Greek yogurt for an extra protein boost. Sometimes I sprinkle a few more fresh berries on top for color and freshness. A little pinch of powdered erythritol can also give it that 'bakery' feel without the added sugar. This isn't just a breakfast; it's a comforting, satisfying meal that truly fuels my day from start to finish. If you're on the hunt for a breakfast that's easy, delicious, and genuinely good for you, I highly recommend giving this high-protein & high-fiber French Toast Bake a try. It’s transformed my mornings, and I bet it will do the same for yours!
