Ingredients:
• 1 ripe banana, mashed
• 1 egg
• 1/2 cup rolled oats
• 1/2 tsp cinnamon
Topping ideas:
• Greek yogurt
• Warm berries
• Nut or seed butter
• Cacao nibs, granola, or whatever you love
Instructions:
In a small bowl, mash the banana, then mix in the egg, oats, and cinnamon until combined.
Heat a skillet over medium heat and lightly grease with coconut oil, butter, or ghee.
Pour the mixture into the pan and let cook for 1–2 minutes.
Gently flip and scramble until cooked through and lightly golden.
