Ingredients:

2 cups all-purpose flour

1/2 cup granulated sugar

2 tsp baking powder

1/2 tsp salt

1/2 cup milk

1/4 cup unsalted butter, melted

2 large eggs

1 tsp vanilla extract

1 cup fresh strawberries, diced

8 oz cream cheese, softened

1/4 cup powdered sugar

1 tsp lemon juice

1 cup powdered sugar (for glaze)

2-3 tbsp milk (for glaze)

1 tsp vanilla extract (for glaze)

Directions:

Preheat the oven to 375°F (190°C) and grease a donut pan.

In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.

In another bowl, mix the milk, melted butter, eggs, and vanilla extract.

Combine the wet ingredients with the dry ingredients, mixing until just combined.

Fold in the diced strawberries gently.

Spoon the batter into the prepared donut pan, filling each mold about 3/4 full.

Bake for 15-18 minutes or until the donuts are golden and a toothpick inserted comes out clean.

While the donuts are baking, prepare the cheesecake filling by beating the cream cheese, powdered sugar, and lemon juice until smooth.

Once the donuts have cooled, cut a small hole in each donut and pipe in the cheesecake filling.

Prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth.

Drizzle the glaze over the donuts and let it set before serving.
