I never liked chicken salad until i tried this..
Chicken salad is one thing that’s always been hard for me to make. Somehow it just never turned out right. But finally we have a winner! I was hesitant about the grapes.. i know it’s weird.. but TRUST.. it works.
3 cups rotisserie chicken pulled off the bones
1/2 cup chopped celery
1 cup red grapes, quartered
1/2 cup light mayonnaise
salt
black pepper
Combine all ingredients in a big bowl
Lay spring mix and sliced swiss cheese on a warmed croissant. Add on 1/2 cup of your chicken salad mixture.
