... Read moreBubur Manado, also known as Tinutuan, is a unique porridge that truly reflects Indonesia’s rich culinary heritage, especially from the North Sulawesi region. I've tried making this dish several times, and what I love most is how versatile and forgiving it is. The combination of corn, sweet potatoes, and pumpkin not only boosts its natural sweetness but also adds layers of texture that make it comforting for any meal—whether breakfast or dinner.
In my experience, the key to a great Bubur Manado lies in the simmering process. Cooking the rice slowly with plenty of water until it truly breaks down creates a creamy porridge base without needing coconut milk. The addition of the aromatic lemongrass (serai) lightly infuses the dish with subtle citrus notes that brighten the overall flavor.
One handy tip I found is to prepare the accompanying garnishes, like ikan asin goreng (fried salted fish) and sambal, in advance. They provide a delightful contrast of salty and spicy that complements the mellow porridge. Adding a squeeze of fresh jeruk nipis (lime) just before eating really lifts the dish and balances its earthy flavors.
For those looking to adapt the recipe, feel free to experiment with the vegetable mix. I've substituted kangkung (water spinach) with kale or spinach depending on availability, and it worked well. The key is to add the leafy greens towards the end so they retain a slight crunch and vibrant color.
Overall, Bubur Manado is one of my favorite dishes when I want something nourishing and light but packed with vitamins. Its natural ingredients and absence of heavy coconut milk make it suitable for a wholesome diet. If you're curious about Indonesian cuisine or looking for healthy porridge recipes, this dish is a must-try that brings both comfort and nutrition to your table.
