Happy HALLOUMI! Recipe

This recipe comes from the Glucose Goddess book.

I recently was diagnosed with PCOS w/ Insulin Resistance. I have been struggling to find recipes that I find really good, nourishing and fulfilling and this one was pretty good. Still was a little hungry after but I believe it was due to not eating lunch.

I’m on the Cysterhood App as well but as a vegetarian have found it hard to give up dairy for the time being as it’s a huge protein source.

I know everyone’s journey with PCOS is different and this is the beginning of mine.

For me accountability is what I need the most and theirs no better accountability then social lol

... Read moreSince my PCOS and insulin resistance diagnosis, finding meals that are both delicious and supportive of my health has been a real challenge. That's why discovering recipes like this pan-fried halloumi has been a game-changer for me! It's not just tasty; it truly helps me feel nourished and fulfilled, which is crucial when you're trying to manage symptoms. Many of us with PCOS struggle with blood sugar management and insulin resistance. Halloumi, being a high-protein cheese, can be incredibly beneficial. Protein helps keep you feeling fuller for longer, which can prevent those dreaded blood sugar spikes and subsequent cravings. It's also a great way to ensure you're getting adequate protein, especially if you're like me and follow a vegetarian diet, making it harder to find satisfying, non-meat options. While dairy can be a concern for some, I've found that halloumi in moderation can be a fantastic addition, offering calcium and a dense nutrient profile without the high lactose of some other cheeses. It's all about finding what works for your unique body! To get that perfect golden-brown, crispy exterior you see in all those mouth-watering close-ups, here are my go-to tips for pan-frying halloumi: Always use a good quality non-stick pan, and don't be shy with the heat – medium-high works best. A tiny drizzle of olive oil or avocado oil is usually enough. Slice your halloumi fairly evenly, about 1/2 inch thick, so it cooks through consistently. Don't overcrowd the pan; cook in batches if necessary to ensure each piece has enough space to brown beautifully. Flip only when you see that gorgeous golden crust forming. It usually takes about 3-4 minutes per side. The internal texture becomes wonderfully soft and creamy, a delightful contrast to the crispy outside! This 'Happy Halloumi' isn't just for lunch or dinner. It makes an incredible savory breakfast! Imagine it alongside some perfectly sautéed spinach and maybe a poached egg for an extra protein boost. I often toss my pan-fried halloumi cubes into a vibrant salad with mixed greens, cherry tomatoes, cucumbers, and a light vinaigrette for a quick and satisfying meal. You could also wrap it in a whole-wheat tortilla with some hummus and crunchy veggies. It's so versatile and a surefire way to make your meals feel more exciting and fulfilling, helping you stick to your healthy eating goals without feeling deprived. Navigating a PCOS diet can feel overwhelming, but finding delicious and easy recipes like this has made my journey so much more manageable. It really reinforces the idea that healthy eating doesn't have to be bland or complicated. For anyone else on this path, remember that every small, healthy choice adds up, and don't be afraid to experiment to find what works best for your body and taste buds. Accountability, as I mentioned in my original post, is key, and sharing these finds with you all helps keep me motivated!
