One Pan Enchilada Skillet
1.5 pounds chicken breast
1 yellow onion
2 cloves garlic
2 bell peppers
1 can Kernel Corn
1 can Black beans
2 medium zucchinis
1 19oz Can Red Enchilada Sauce
1/4 cup Shredded cheddar cheese
Cook chicken in pan with some avocado oil
Remove once done.
Add onion and garlic and sauté till translucent
Add in red pepper, corn and black beans.
Add in zucchini and back in chicken with enchilada sauce.
Let simmer about 20 mins.
Top with cheese and avocado 🤌🤌
